From EmilyBites with some modifications! These are a delicious on the go breakfast and soon to be staple of my new pre-prepping ways. Also, note that Strawberries can be swapped for other fruits, or you could add chocolate chips 🙂 I’m going to try swapping in Peanut Butter and Chocolate Chips next… I’ll let you know how it goes!
INGREDIENTS:
- 2 cups old fashioned oats (I used steel cut oats.)
- 1/4 cup packed brown sugar
- 1 ½ teaspoons baking powder
- ¼ teaspoon salt
- 2 eggs
- ¾ cup milk
- 2/3 cup mashed ripe banana (I just used 2 bananas)
- ½ teaspoon vanilla extract
- 1 cup diced fresh strawberries
DIRECTIONS:
- Preheat the oven to 350. Place cupcake papers in the muffin tin.
- Combine the oats, brown sugar, baking powder and salt in a large bowl and stir until thoroughly mixed.
- In a separate bowl, whisk together the egg white, egg, banana, milk and vanilla. Add the wet ingredients to the dry ingredients and stir until blended together. Stir in the strawberries. You can save 12 strawberry pieces to pop on top.
- Spoon the oatmeal mixture evenly between the prepared muffin cups. Bake uncovered for 22-25 (mine needed 30) minutes or until oatmeal is lightly browned and a toothpick inserted into the middle comes out clean.
