With the holidays lurking most people tend to indulge, myself included. I’m not the type of person who is going to give up Thanksgiving stuffing in favor of quinoa, or forgo a piece of pie with a heaping portion of whipped cream. That ain’t me, folks. But, since I’ll be indulging (over indulging, let’s just be honest), I thought I’d share a clean eating recipe that might help compensate for all of the bad eating we’ll be doing. Enjoy!

Ingredients:
- 2 tomatoes, seeded and diced
- 1 green chile, diced (I used a mild Anaheim, but feel free to bring in more heat with a jalapeno)
- 1 small white onion, diced
- 2 garlic cloves, minced
- 2 cups spinach or kale, chopped
- 1 lb lean ground turkey (I’m using 99% fat free)
- 1 tsp chili powder
- 1 tsp cumin
- 1/4 tsp cayenne pepper
- 1 tsp dried oregano
- 1 tsp ground black pepper
- salt to taste
- Butter leaf lettuce or whole wheat tortillas
Over medium heat, saute tomatoes, green chile and onion together until onions are translucent. Add garlic and spinach, saute another minute. Add turkey, breaking up in to little pieces and cook until meat is fully cooked (meat is completely white and firm- no pink). Add all spices and stir together.
Serve in lettuce cups or on whole grain tortillas. Top with avocado or other favorite toppings.
