I have two boys - one who is almost 4, and one who is 16 months. They both DEVOUR these pancakes every time we make them. I meal prep these pancakes 1-2 times a week, and it saves a ton of time for us in the morning. I also feel good about the ingredients - all of which we get in bulk at Costco. (Shout out to my BFF, Kirkland.)

INGREDIENTS:
- 4 Eggs
-1/2 Cup Applesauce
-1 Cup Oats
-2 Bananas
-2 Teaspoons Vanilla Extract
-2 Teaspoons Cinnamon
DIRECTIONS:
You can ground your oats in a magic bullet type apparatus (if you wish), but I never do. Ain’t nobody got time for that. 😉 Put all the ingredients in a blender and go! Cook the pancakes on medium heat in a buttered pan. Enjoy, and set some aside for tomorrow’s breakfast so you can drink your coffee while it’s hot!
