Christmas Crackle Recipe

christmas crackMy Christmas Crackle seems a little white trash and is most certainly not healthy, but it’s a great holiday snack to satisfy a salty/sweet craving. Also, I’m a little white trash, so it’s perfect.

Additionally, I usually have enough of the ingredients on hand to make it for a last minute dessert need. It’s also a really easy recipe for small kiddos to help with.

1 c brown or white sugar
1 c unsalted butter (yeah, an entire cup)
2 c chocolate chips
1 c coconut flakes

Optional:
1 c chopped nuts
1 c butterscotch or peanut butter chips
1 c mini M&Ms
holiday jimmies or colored sugar sprinkles

– Preheat oven to 350 degrees
– Melt butter and sugar in a saucepan until liquid-y. Simmer 5-6 minutes, stirring frequently
– Line 40 Saltine crackers on a cookie sheet or 9in x 11in Pyrex sprayed with Pam
– Pour sugar mixture over crackers
– Bake 8-10 min
– While cooling, immediately sprinkle chocolate chips, coconut flakes and any optional toppings over the crackers
– Cool for 10 min. then break apart
