Picnic Perfect Chicken Salad

Summer is making its glorious entrance here in northern Nevada, and I am looking forward to a season filled with sunshiny days splashing our way around the area, exploring new places and reconnecting with some old favorites.  Few things connect me back to some of my favorite childhood memories quite like loading up the car with blankets and goodies and gallivanting off for some good old-fashioned Summer fun.

Along with the swim suits, sunscreen, and beach towels, it’s the time of year when I start pulling out some of my favorite picnic-friendly recipes.  This chicken salad is a huge hit with both of my guys, even the super picky one (that would be Hubster, for those who are keeping track).

3lbs Bone-In Chicken
5 stalks Celery, 2 Chopped
1 Small White Onion
2 Bay Leaves
Garlic Salt
3 whole Green Onions, Chopped
1 Cup Apples, Chopped
1/2 cup Mayonnaise
1/2 cup Plain Greek Yogurt
2 Tbsp Dry Parsley
1 Tablespoon (to 2 Tablespoons) Brown Sugar
Juice Of One Lemon


Combine chicken, white onion, half the celery, bay leaves, garlic powder, and black pepper in a large pot.  Bring to a boil, then reduce heat and simmer until chicken is cooked through (about 45 minutes to an hour).

Allow chicken to cool, then pull all of the meat off the bones, chop into bite-sized chunks and set aside.


Mix in apples, celery, and green onion.


In another bowl mix mayonnaise, yogurt, lemon juice, brown sugar, dried parsley and salt and pepper to taste.


Pour dressing over the chicken, fruit, and veggies and toss together.  Refrigerate for several hours, or overnight.

Throw it in the cooler along with the rest of your picnic goodies and pile into the car for some Summertime fun.
